A 5-days color extraction at 14oC for each of the three varieties separately and alcoholic fermentation in stainless steel tanks for each variety separately.
The blend ages for 12months in French and American 2nd and 3rd used barrels of 225lt.

- Serve at a temperature of 15 °C.
- Aged cheeses such as gruyere and hard cheese.
- Fatty fish (dusky grouper, white grouper).
- Game and various cuts of medium rare beef.
